South Beach Diet Recipes

Try these delicious South Beach Diet recipes:

Oven-Roasted Vegetables

1 med zucchini, cut into bite-size pieces

1 med summer squash, cut into bite-size pieces

1 med red bell pepper, cut into bite-size pieces

1 med yellow bell pepper, cut into bite-size pieces

1 lb fresh asparagus, cut into bite-size pieces

1 red onion, chopped

3 Tbsp extra virgin olive oil

1 tsp salt

½ tsp black pepper

1. Preheat the oven to 450°F. Place the zucchini, squash, bell peppers, asparagus, and onion in a large roasting pan, and toss with the oil, salt, and black pepper. Spread in a single layer.

2. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.

Makes 4 servings

Per Serving: 170 cal, 5 g pro, 15 g carb, 11 g fat, 2 g sat. fat, 0 mg chol, 5 g fiber, 586 mg sodium

 

"Rice"

Shred cauliflower in a blender and steam it. Now it looks like rice. Serve it with some stir fry veggies.


Quiche

Chopped broccoli or shredded zucchini

5 eggs

2 green peppers diced

1/4 cup onion, diced

1/2 cup shredded low fat mozzarella

1/4 cup oil

Salt, pepper to taste

Combine vegetables, onion and peppers .
Beat eggs well then add oil and the cheese to the egg mixture, stir.
Pour on top of vegetables and bake uncovered 45 minutes to 1 hour.

Turkey Patties

2 lbs ground turkey

¼ cup old fashion oatmeal

4 eggs

Season salt

chopped onion 

Mix well, form into patties, then fry, bake or grill

 

Tomato Vegetable Soup

1 medium onion, chopped

1 T Olive Oil

4 cups water

4 chopped tomatoes

4 stalks celery, chopped

1 T chicken bouillon or 2 cubes

1 can of lima beans

1 T Italian seasoning

Cook onion in oil till soft, still in water, bring to boil. Cover and simmer 30 minutes. Add, beans & continue cooking 10 minutes.
